Glucono-delta-lactone (GDL) is obtained by oxidizing glucose into gluconic acid or its salts through purification, desalination, decolorization, concentration and crystallization. It is a multifunctional food additive. GDL is a non-toxic white crystal or crystalline powder, almost odorless, first sweet and then sour, easily soluble in water, and decomposed into chemical substances at 25ºC. it is used as sour agent and stabilizers and coagulators in the food industry.
